Kuramae Pastry Shop "Patisserie FOBS" Celebrates 10th Anniversary

Published Oct 20, 2026

Patisserie FOBS, a pastry shop in 3-chome Kotobuki, Taito-ku, marked its 10th anniversary on October 9, 2026. It is located between Tawaramachi Station and Kuramae Station.

Owner Yoshinori Yasui worked as a roof tile craftsman in the family business, then worked at Italian and French restaurants before moving into pastry making. After about three years of training in France, he opened the shop in October 2016 with his wife Yuko, a former pâtissière. The shop's name comes from the French initials of flour, eggs, butter and sugar.

Signature Item: Gaufrette

Based on the traditional gaufre of Lille in northern France, this refrigerated sweet sandwiches buttercream between layers of brioche dough. After being featured in magazines and on TV, orders poured in, and at one point production could not keep up, so the shop paused selling its fresh pastries. The next most popular item after the Gaufrette is the Mille-feuille, and in 2026 the shop was selected as one of Tabelog's "Sweets TOKYO Hyakumeiten" (Top 100 Sweets Shops).

New Challenges This Year

The couple now makes everything themselves, continuing to refine their existing products. This year, they sought out fruit producers on their own and came across fig farmers in Aichi Prefecture, among others. They began selling the peach tart they had long envisioned this year, and also turned a fig tart into a product for the first time.

Yoshinori says, "I want to spread the Gaufrette even more widely across Japan." Business hours are 13:00–18:00 (until 17:00 on Sundays).
